Spicy Honey Glazed Pork Chop (Chef Aaron McCargo, Jr.)

A huge “thank you” for the following Spicy Honey-Glazed Pork Chop (dialysis-friendly) recipe provided by Chef Aaron McCargo Jr., Food Network Host, Big Daddy’s House

SPICY HONEY GLAZED PORK CHOP

Ingredients:

1½ pounds (or 5 thinly sliced) boneless center-cut pork chops

1½ tbsp canola oil

¼ cup honey

Spice blend (mix together in small bowl):

1 tbsp cayenne pepper

1 tbsp smoked paprika

½ tsp Italian seasoning

½ tsp black pepper

Preparation:

Pre-heat grill or broiler.

After rinsing off pork chops, pat dry with paper towels. In medium bowl mix oil and spice blend together and toss pork chops in mixture until evenly coated.

Place pork chops on cake rack lined sheet tray leaving space between pork chops while placing on rack.

Broil or grill 2-3 minutes in pre-heated oven (set on broil) or grill then turn over and cook for additional 2-3 minutes.

Brush pork chops with honey on the one side and grill or broil for additional 1-2 minutes or until lightly caramelized.

Remove pork chops from oven and let rest 3-5 minutes before cutting.

Carrot and Ginger Mash

Ingredients:

2 cups baby carrots

3 cups water

½ tsp fresh chopped ginger

½ tsp honey

½ tsp black pepper

½ tsp vanilla extract

1 tbsp chopped fresh chives

Preparation:

Boil carrots in water on high heat for 30-35 minutes or until carrots are very tender and or water is evaporated.

Lower heat to low and smash carrots until smooth with potato masher.

Add remaining ingredients and stir until well mixed.

Top with chopped chives and serve.

Serves 5

Bronx Bacon Bomb (Adapted from several recipes)

Ingredients:

  • 1 lb. bacon (thick cut, preferred)
  • 1 lb. ground beef or pork sausage
  • 1/2 cup chopped green onions
  • 1/2 cup bread crumbs
  • Adobo seasoning (dry spice)
  • Sofrito (wet spice)
  • Paprika, oregano, salt, pepper (season to taste)

Directions:
1. Combine ground meat mixture with all seasonings. Form a square-shaped loaf about 1 inch thick on foil sheet or plastic wrap. Crumble cooked bacon strips chopped into bite-sized pieces atop and roll up the loaf.

2. Prepare square-shaped lattice bacon weave which must be tight (crisscrossed with no spaces). Place meatloaf on edge of bacon weave, and once fully rolled up, pinch the ends and seams together (seal to prevent too much moisture loss).

3. Preheat oven 425 degrees (F). Sear for 10 minutes, then bake at 400 F for an hour or 1 1/2 hours, until internal temperature is 165 F.

4. Glaze with BBQ sauce or savor it as is. Either way, this dish is da’ bomb!

Blue Goji Warrior Blend  (Tania Fuentez)

  • 1 cup 8-10 oz. coconut milk (unsweetened)
  • 1 scoop Sunwarrior Warrior Blend Raw Protein Powder (natural)
  • 1 banana
  • 1/4 cup fresh blueberries
  • 1 cup frozen blueberries
  • 1 tsp. Goji berries
  • 1 tsp. chia seeds
  • Handful cashews
  • 1 sprig of fresh mint

Combine the ingredients and mix vigorously in a blender. Pour into a chilled glass, garnish with fresh mint and enjoy!

Warrior Blend Orange Pina Smoothie (Tania Fuentez)

  • 1 cup 8-10 oz. coconut milk (unsweetened)
  • 1 scoop Sunwarrior Warrior Blend Raw Protein Powder (vanilla)
  • 1 banana
  • 1 cup frozen pineapple chunks
  • 1/2 navel orange (squeezed)
  • 2 ice cubes

Combine all ingredients and mix vigorously in a blender. Pour into a chilled glass and enjoy!

Chocolate Almond Sun Shake (Tania Fuentez)

  • 1 cup 8-10 oz. vanilla almond milk (unsweetened or sweetened)
  • 1 scoop Sunwarrior Classic Protein Powder (chocolate)
  • 1/2 avocado
  • 1 tbsp. natural almond butter
  • 1 tbsp. flax seeds
  • 4-5 ice cubes

Combine the ingredients in a blender and mix vigorously. Pour into a chilled glass and enjoy! NOTE: Recipe can be adjusted to taste. Be creative.
